Green Garnet Amaranth (Amaranthus cruentus) is an annual flowering vegetable grown since ancient times in South and Central America. Today, it is grown as microgreens, as a leafy green vegetable, and also as a seed crop as a gluten-free alternative to wheat or other cereal grains. Amaranth plants thrive in full sun in a variety of soil types and grow to a giant 6 feet tall or more. Amaranth is a resilient plant that thrives even under adverse weather conditions and readily self-sows, making it ideal for homesteading.
